Bean & Pesto Paste with Carrot

This is a power sarni, packed with a hummus-type paste made with protein-packed beans and tasty pesto combined with grated carrots. It is quite a moist mixture, so it could make your sandwiches soggy if you make it too far in advance; it’s best to serve it immediately if possible.

Ingredients

  • 400 g/14 oz can of cannellini beans or butter/lima beans, drained
  • 3–4 tbsp</

Method

  1. Put the beans, tomato pesto, salt and pepper in a food processor and whiz until a smooth paste forms. If you don’t have a food processor, put everything on your largest board and chop it all together with a large knife, scraping and blending it as you go.
