This traybake is simplicity itself to put together, leaving you free to do other things while it does its stuff in the oven. Here, we’ve used a delicious mixture of veggie ‘chicken’ pieces combined with potatoes, corn, peppers and tomatoes, but you could swap in other veg as you like, so long as they are cut into similar-size chunks.
