Nobody wants to miss out on sausage rolls! Luckily, you don’t have to. These have a punchy mushroom filling, full of umami flavour. You can make individual rolls, as here, or why not try making a giant one that you can cut into slices and serve as a filling main dish. A giant roll will take about 10–15 minutes more to cook.

  • 1 red onion, peeled and finely chopped

Method

  1. Heat the oil in a large, deep frying pan, add the onion, season with salt and pepper and cook for 10 minutes, until the onion is soft. Add the mushrooms and cook for 2 minutes more, then stir in the walnuts, sun-dried tomatoes, olives and soy sauce and cook for 5 minutes, stirring occasionally. Remove from the heat and stir in the breadcrumbs.
