This Indian-style dish is made with odds and ends that are already in the kitchen. It has a wonderful confetti of colours and a fabulous mingling of hot and spicy flavours.
Heat 2tbsp of the oil in a non-stick pan until it reaches smoking point, then reduce the heat slightly and add the tofu (you may need to add in batches). Stir-fry for about 3-4 minutes, until it turns golden, remove and put to one side.
