These meatless balls are a cinch to make and have a really substantial texture and savoury flavour, meaning they’ll be a hit with everyone. Here, they are baked in a rich, garlicky tomato sauce and served with spaghetti. This is a good dish to make ahead and reheat, as the flavours only get better!

Ingredients

  • cooked spaghetti or other pasta, to serve
  • chopped fresh parsley, to garnish

Method

  1. To make the no-meat balls, first cook the rice. Put it in a small pan and pour over enough water so it comes about 5cm/2in above the rice. Add a pinch of salt, cover with the lid ajar and cook for about 20 minutes or according to the packet instructions, until tender. Top up with a little more hot water if it starts to dry out too much.
