This is the easiest soup you will ever make. It’s so satisfying, and is just as good in hot or cold weather. Be prepared to slurp while eating – it’s compulsory!

Ingredients

  • 275 g/10 oz rice noodles
  • 340 g/11½

Method

  1. Soak the rice noodles in hot water as per the packet instructions, then drain well and set aside.
  2. Whiz half the can of corn, with all of its juice, in a food processor until it is smooth and creamy.
  3. Heat the oil in a large deep pan, add the spring onion and season with salt and pepper. Cook for 3–4 minutes, until soft, then stir in the chilli flakes i
