Silken tofu is a fabulous high-protein alternative to use for scrambled eggs, since it has a similar texture and carries flavour really well. Here, turmeric, mustard and nutritional yeast flakes are used, and the scramble is served with tasty slices of tempeh in soy sauce on a toasted bagel. Now that’s a snack to get excited about!

Ingredients

  • 150 g/5 oz tempeh, sliced thinly
  • 1 tbsp soy sauce

Method

  1. In a shallow bowl, toss the tempeh slices in the soy sauce and set aside.
  2. Put the silken tofu in another bowl and mash with a fork, leaving a bit of texture.
  3. Heat half the oil in a frying pan, add the mashed tofu and stir. Season with salt and pepper, turmeric, mustard and nutritional yeast, then stir well and cook gently for 5–6 minutes until heated
