These nuts are so addictive – be prepared for the fact that they will disappear in a flash. It’s best to use almonds with their skins on, which have a better flavour when roasted, and by happy chance also contain more fibre. You could also use blanched whole almonds if that’s what you have to hand.

Ingredients

  • ½ tsp vegetable oil
  • 225 g/8 oz/2

Method

  1. Heat the oil in a large frying pan, add the nuts and salt and cook for 3–4 minutes, moving them around continually so they don’t burn and to coat the almonds in the salty oil.
  2. Remove from the heat, allow to cool and transfer to serving dishes.
