Some clever alchemy happens when you use the juice from a can of chickpeas as it whisks up light and foamy, similar to egg white. The texture of vegan meringue is different and can be quite delicate, which is why we’ve made several smaller ones, but you can make a larger one if you prefer. Fragility aside, they taste great – these are finished off with a squirt of cream and topped with kiwis, but you can choose your favourite fruit.
