These light lemon sponges are topped with lemon buttercream and have their tops cut off and turned into wings for extra appeal. This isn’t at all difficult to do but looks sweet. Just make sure the sponge is completely cold before you try to cut it.

juice and zest of 1 lemon

Method

Line a 9-hole cupcake tin/pan with paper cases. Preheat the oven to 180°C/350°F/Gas 4.
Make the cupcake batter, adding the lemon juice and zest to the wet ingredients in the jug or pitcher and blending before adding to the dry ingredients.
