Spicy, fresh, crunchy and absolutely delicious. For those of you with reservations about tofu – and I am one – be reassured that done right it can be yummy, especially sandwiched between crisp veggies and generous amounts of mayonnaise. Buy GMO-free tofu if you can.

  • 140 g ( oz) GMO-free, extra-firm or smoked tofu

Method

Preheat the oven to 180°C (350°F/Gas 4) and line a baking (cookie) tray with baking parchment.

Cut the tofu into 6 slices and make sure you pat the slices dry with some paper towels so they are nice and dry. Put the marinade ingredients in a small bowl and stir until the sugar
