We eat this at home regularly. It is also a great one to make a large batch of and bring to work as it’s brilliant eaten cold as well as warm.

Ingredients

  • 300 g (10½ oz/1⅔ cups) precooked rice
  • olive oil, for frying

Method

Have the rice precooked according to the packet instructions.

Heat a splash of olive oil in a large pan, add the leek and fry for about 3–5 minutes until beginning to soften. Add the broccoli and stir for about another 5 minutes until the vegetables are nice and soft. Stir in the precooked rice, tamari, grated ginger, maple syrup and spinach and fry for a few minutes until all is well i
