This is a very typical Swedish dish usually made from leftovers. This is my humble veggie version with everything I love. Dice the vegetables fairly finely so that they all cook quickly and evenly. I like to finish with a couple of slices of beetroot – you can use fresh, vacuum-packed or from a jar.
Heat a splash of olive oil in a large pan and fry the onion for 5 minutes, then add the sweet potato, potato, pepper and carrot and fry for 10–15 minutes, stirring occasionally, until the potatoes are cooked and soft.
