This is a very typical Swedish dish usually made from leftovers. This is my humble veggie version with everything I love. Dice the vegetables fairly finely so that they all cook quickly and evenly. I like to finish with a couple of slices of beetroot – you can use fresh, vacuum-packed or from a jar.

Ingredients

  • olive oil, for frying
  • ½ red onion, diced
  • 1 sweet potato, peeled and diced
  • 1 l

Method

Heat a splash of olive oil in a large pan and fry the onion for 5 minutes, then add the sweet potato, potato, pepper and carrot and fry for 10–15 minutes, stirring occasionally, until the potatoes are cooked and soft. Season with salt and pepper to taste. Add the chopped herbs and kale and just allow them to wilt into the mixture. Give it all a good stir just before serving. It is best eaten im
