This recipe can look a bit long, but I seriously suggest doubling it so you can keep some for later.

Ingredients

  • 4 large carrots, chopped
  • 1 potato, peeled and chopped
  • 1 tablespoon

Method

Preheat the oven to 180°C (350°F/Gas 4).

Cook the carrot and potato in boiling water for about 10 minutes until soft. Drain and set aside to cool. Mash with a splash of plant cream and salt and pepper to taste.
