This is a banana-free instant ice cream! Yes, I know that every other instant version out there contains bananas, so let’s try something a little bit different.

Ingredients

  • 2–4 ice cube trays of frozen coconut cream
  • 1 tablespoon maple syrup
  • 1 teaspo

Method

You will need to have pre-frozen coconut cream in ice cube trays – a small tray should be enough for one portion. Put the coconut cream cubes in a blender along with the other ingredients and blitz until you have instant ice cream. Serve immediately with your choice of toppings – a handful of nuts, seeds, hemp hearts or cacao, or a dollop of nut butter.
