Method

Line a baking (cookie) sheet with some baking parchment.

Put the almond and oat flours in a blender and give it a good whizz until both are combined and you have an even finer flour. Add the rest of the ingredients except the jam and pulse until combined. Scoop out 6–8 cookies on to the prepared sheet. Gently create a thumbprint in the middle of each cookie, then put them in the freezer
