This colourful, tasty dish is suitable for serving as a first course or using as a side dish with seafood, meat or chicken.

Ingredients

  • 1 red capsicum (pepper)
  • 1 green capsicum (pepper)
  • 1 yellow capsicum (pepper)

Method

  1. Cut all the capsicums in half, remove the seeds and membranes and put the cut capsicums on a grill tray cut-side-down.
  2. Brush the capsicums with a little oil and cook under a preheated grill until the skin has blackened and blistered. Cover with a tea towel or enclose in a plastic bag and allow the capsicums to cool. The skins will then come away from the flesh mor
