The water used for cooking this dish should really be Vichy water, a natural and healthy mineral water from the springs at Vichy in France. These carrots are a colourful accompaniment to veal and chicken dishes.

  1. Peel the carrots, slice thinly and put in a pan with enough water to barely cover. Add a pinch of salt as well as the sugar and butter and cover with a paper lid made from a round of greaseproof paper (see Chef’s tips).
