    Juicy, firm, and sweet with a clean green flavor, this adaptable vegetable is more substantial than most bok choys, but not as forceful as most dark leafy brassicas. Versatile, it is open to interpretation in roles hot, at room temperature, and chilled; plain and fancy. Walnuts are a fitting companion, but pecans, peanuts, or almonds also match, as do garlic, chilli, carrots, onion, and ginger.
