    Good for cactus beginners (and for those on a fat-free regimen), thanks to its fresh crunch and bright coloring. Adjust heat and tartness to your level, then serve on grilled or poached seafood or with bean and grain dishes. For those who prefer meat, serve on grilled burgers, London broil, or chicken.

    The relish is at its best within an hour or so of preparation. If you want to make it ahead, mix and refrigerate the vegetables, then add the seasonings just before serving. I like th
