Broiled Chayote Wedges

    Broiling chayote produces concentrated sweetness and crunch but a sad pallor. Add some color and juiciness by broiling tomato halves with the chayote during the last few minutes of cooking.

    Ingredients

    • 2 medium-large chayotes
    • 1 tablespoon olive oil
    • Coarse salt, preferably fleur de sel

    Method

    1. Preheat broiler with pan set at highest position. Peel chayotes. Halve lengthwise, then cut each half lengthwise into 4 wedges. Toss with olive oil.
    2. Set slices on preheated broiler pan. Cook until tender throughout, 5 to 7 minutes. Turn once during cooking, as the pieces become speckled with brown.
    3. Serve at once, accompanied by the salt and citrus wed
