    • About

Miniature corn and okra podlets look and taste truly delightful together—and cook in the same amount of time. The finest okra (and nothing less will do for this simple recipe), like the finest corn, is at its best steamed: bright, sweet, and succulent. If corn is tiny, use 36 ears; if larger, use 18 ears, and halve them diagonally.

    Ingredients

    • 18 or 36 ears baby com
    • 1 pound very small okra
    • tablespoons

    Method

    1. Husk corn as in Preparation. Halve diagonally if large.
    2. Rinse okra. Pare off caps without cutting into the pods.
    3. Set corn and okra on rack over boiling water. Cover and steam until just barely tender, 3 to 5 minutes. Do not cook okra until soft; it should be slightly al dente for maximum flavor and color.
    4. Transfer vegetables to a heated dish
