Juicy and chewy, whole mushrooms tossed with crunchy nuts are a pleasing change-of-pace side for a roast. Plump cremini (the smaller they are, the cuter they look and the more manageable the mouthfuls) are just right for the job. Roast in a hot oven after you’ve removed a turkey or chicken to rest before carving. Nut oil and spices accentuate the flavors rather than adding contrasting notes. (If needed, see Note, to roast, husk, and chop hazelnuts.)
