Perfect picnic or buffet fare, petite crosnes are barely cooked, then marinated in a delicate vinaigrette. They emerge delightfully crisp, pale, and pearly from their bath. Substitute tarragon or chervil for dill, if desired. For a meaty approach, add very thin strips of smoked ham or turkey and increase the amount of dressing. Mirin is found in Japanese and natural food shops and some supermarkets.
