Although fuzzy gourd resembles zucchini superficially, it does not shrink much or become flaccid in the same way, but retains its texture and citric edge—here underscored by lime. Lime is just one flavor that suits the versatile vegetable: Grated ginger also fits fine. Or omit the shallot and substitute a little garlic, then finish with fresh basil, lemon thyme, or mint and chives. You might add another shredded vegetable, such as carrot, or julienne of ham.
