Refreshing, light, and low in fat, this salty-sweet-tart toss is a good partner for broiled or grilled fish. For a vegetable meal, serve with stir-fried tempeh or tofu. Cut the apple and celery extra-fine so they will be dispersed evenly throughout the leaves. Dress the salad when ready to serve, not beforehand, or it will become watery.
