However you choose to cook these meaty leaves, they’ll taste deep green and earthy, reminiscent of spinach—but minus the iron bite. The quantity you need will depend upon the size of the plants. Tiny spring tips need no trimming—thus, 1 pound can feed 4 people. But you’ll need twice that when plants are large and heavy-stemmed. The following recipe is for a size in between. If you have preserved lemons, mince some, then stir into the cooked leaves with their oil.
