Chewy shiitake strips and silky squash ovals are paired for a light side dish for seafood or poultry, or to complement a mixed noodle or grain dish for a vegetable meal. Don’t “economize” on skimpy dried black mushrooms (aka shiitake, Chinese, or Oriental mushrooms). Buy the fat, fleshy high-quality ones sold in fine Asian markets. If thin ones are all you can find, use a dozen of them.
