Circlets of pale, raw palm heart mingled with emerald kiwi half-moons and topped by shrimp crescents make a simple, elegant, unusual opener. Ripe kiwis should have a little “give.” If you find only hard ones, slip them into a plastic bag with an unripe banana and let soften a day or two. Yellow cherry tomatoes (less acid than red ones) are a lovely alternative to kiwi, when in season.
