Parsnips take well to a variety of cooking methods, which yield very different results. Steaming and roasting are my favorites. Steamed parsnips are plump, uniformly smooth, fully sweet, and flavorful. Roasted, the interior turns creamy as the exterior caramelizes. Whichever method you choose, avoid overcooking; parsnips quickly turn mushy. Gauge about 1 pound for 2 servings.
