I’m not usually one for fussed-over starters, but snow peas cry out for filling and can be pleasingly plumped to present as an elegant alternative to crudités. The emerald pods are packed with a pureed green pea mixture for doubled pea power. Salmon slivers seal the filling in the little canoes and add a bright and luxurious tone. If kefir cheese is difficult to find, use sour cream or thick yogurt.
