Glossy, mint-infused sugar snaps are produced by a cooking method usually reserved for shelled green peas. A wrapping of lettuce preserves their color and moisture without additional liquid and yields exceptionally full-flavored peas. Boston lettuce leaves work particularly well, but any large-leafed lettuce will do the trick. Enjoy as is, or toss with braised tiny carrots or pearl onions, or sautéed cucumber crescents.
