Method

Bring water to a boil with salt. Off heat, stir in couscous and pea sprouts. Cover at once. Let stand 10 to 15 minutes. Fluff with wide-tined fork, adding ¼ to ½ teaspoon Asian (dark) sesame oil and a few teaspoons of lemon juice. Serve warm or at room temperature.
