Limas can be cooked as Basic Shell Beans, but they are particularly pleasing in cream. Like horticultural beans, they require gentle cooking to keep the interior smooth and skins intact. Also like horticultural beans, limas are more luscious if cooled in their cooking liquid, then reheated, rather than being served freshly cooked. Spoon alongside roasted veal, lamb, chicken, or pheasant.
