    Pale bittersweet spears played up by a thick, smooth, fruity (but not sweet) dressing are an unusual and effective combination. The vivid sunset pink dressing can be made well ahead and refrigerated, as convenient. Grapeseed oil is my choice for the mildest, cleanest taste. Although relatively expensive, it is well worth having on hand for dishes where delicacy and lightness are paramount.
