Bittersweet, chewy greens and a generous helping of smoky cheese are bound with egg to form a flat golden cake that can be served hot or at room temperature, as a main course, appetizer, or part of a picnic or tapas-style meal. The high proportion of dandelion makes this a very vegetably dish; if a more omelet-like texture is preferred, halve the quantity of greens. Enjoy for brunch or supper with a tomato and herb salad, whole wheat baguette, and light red wine.
