Crisp and juicy with a bright salt-sweet balance, this salad is a natural for grilled fish or poultry, or to accompany grain entrees. Pastis, the generic name for the fennel- and/or anise-flavored apéritifs of France, is most widely available in the United States under the Ricard and Pernod labels, but there are others. Choose tangy cracked green Provençal or Greek olives, herbed or plain.
