Large taro corms fry to the most flavorful, crunchy, and visually striking (feathery brown calligraphic swirls on a golden ground) of chips—provided you have uniform thin slices and a thermostatically controlled fryer. Serve warm, tucked into a napkin-lined basket. If you have only a knife and an iron kettle for tools, stick with packaged taro chips, which can also be delicious—if a tad less so.
