Salt turnip cubes to firm them up and concentrate flavor, then quick-cook with soft spinach leaves to add moisture and deep green savor. Chilli flakes, garlic, and vinegar add zip to a dish that can serve as a side or first course, either warm or at room temperature. Or toss the cooled mixture with diced sweet red pepper and more vinegar to serve as a salad course.
