Smoky, silky salmon slices wrapped around crunchy sweet Chinese water chestnut morsels make a simple, quietly luxurious appetizer.

Ingredients

  • 1 pound large Chinese water chestnuts (about 2 dozen)
  • 3 tablespoons minced dill, and sprigs for ga

Method

  1. Either soak water chestnuts overnight (see Preparation) or scrub well with a brush.
  2. Either boil water chestnuts for about 6 minutes or steam them for about 10 minutes. Chill in ice water. Peel carefully with very sharp, thin-bladed knife. Halve each one.
  3. Mix dill and chives. Toss with water chestnuts, press
