Bright, curved Late Treviso “petals”, if available, set a dramatic tone maintained by long-stemmed, bright-white enokitake (if you’re not familiar with the little mushrooms). Chopsticks are my utensil of choice for this and other salads made of small slippery bits (you will never use a fork again once you’ve discovered how efficient they are).
