This useful basic recipe can serve as a model to be varied to suit the meal of the moment: Substitute olive oil or nut oil for the bacon; try thyme or oregano instead of rosemary; add garlic, scallions, or shallots if you’re an allium fan. Serve as a side to grilled meat or poultry, along with wheat or buckwheat. Or forgo the meat, and enjoy with grains alone.
