  • About

This dish has several textures (sumptuous petals, crunchy calyces) and flavors (zucchini, mushrooms, green beans, and a distinct sweetness). Although the blossoms are brilliant cadmium orange, the total effect is sharp light green. Serve as a side dish or omelet filling; or stir into risotto; or spoon over gnocchi or soft fresh pasta. Mint is a pleasing change of pace for squash, but the more traditional dill and basil are equally tasty.
