A combination of smallish squash varieties arranged in overlapping slices makes a particularly pretty side dish. Acorn, Carnival, Delicata, and Sugar Loaf work well. If I am using just one, Delicata is my first choice. A small cookie cutter or zucchini corer helps make the presentation tidy. For the marmalade, choose one with fine shreds—not coarse-cut, which won’t adhere properly.
