Sweet and surprisingly rich—given the mere ½ teaspoon butter per serving—this dish can embellish a casual meal or a Thanksgiving feast. Or substitute 1 mini-pumpkin per person: Halve instead of cutting into quarters, and reduce the cooking time. Or bake instead: Set on a foil-lined sheet and bake in a 350°F oven until tender. For variation, sweeten the butter with maple syrup and sharpen with ginger juice.
