Commercial sodas are made by dissolving carbon dioxide gas into a mixture of flavoured syrup and water. When bottled under pressure, the gas is forced to stay dissolved in the liquid by the pressurized space between the cap and the liquid.
The process can be easily duplicated in a home kitchen using a siphon jar. (Be sure to familiarize yourself with the jar’s directions.)
