There are many names given to various flatbreads made to be eaten in one or two bites and cooked dry, dry enough as to not stale in a reasonable amount of time. In some ways, a dry climate is more important than how dry, within limits, the item is itself. Once the water level is low enough not to support bacteria, these biscuits or crackers last a lifetime, unless they happen to pick up moisture from the air, as happens in humid climates.
