In its most basic form, a salad is a dish of raw or cooked vegetables with a sauce or dressing. The earlier carrot slaw (see 6. Carrot Slaw) was a much different salad based on raw carrots with minimal change to their texture and flavour. This carrot salad is based on carrots cooked until their crunch and bitterness are gone.
