Vegetable terrines are a staple of mid-century nouvelle cuisine. Most contained a panoply of vegetables floating in a gelatinized cream, sometimes further filled with diced mushroom or fresh herbs. For this terrine, we move from multiplicity to singularity. The only vegetable used is a carrot. (No surprise there!)

Determine your equipment

Since this dish is called a terrine, you’ll need one. In French, a terrine is a deep ceramic bowl in either a round, oval, or rectangular shape. For this preparation, use a rectangular terrine so the carrots neatly stack. If one isn’t available, a small loaf pan makes a nice substitute. The ingredient quantities specified in this de
