The Swabian word spätzle is the diminutive form of the German word for sparrow. Whoever came up with the relationship between these globs of cooked dough – some people call these dumplings – and birds must have been swimming in one of the local brewery vats. Although my mother was from the next region to the east and ate spätzle as a child, she never served these to me. She did, however, leave me her mother’s spätzle maker when she died.
